Hamantashen
Purim is one of the most joyous and fun holidays on the Jewish calendar.
It commemorates a time when the Jewish people living in Persia were
saved.
Hamantashen is the ever-popular, traditional treat served during
Purim. It is a three-cornered cookie stuffed with a tasty poppy
seed-honey
filling or some other equally delightfully filling.
Sift flour; set aside. Cream shortening and sugar until light and
fluffy. Beat in egg. Add milk and vanilla. Stir in flour until dough
forms a soft ball. Cover and refrigerate at 3 hours or overnight.
Preheat oven to 350F.
Shape dough into a ball the size of a peach, then flatten or roll
out into 4"-6" disc.
Place some filling on each disc.
Bring edges together to form a triangle. Pinch the seams together
from top down to the corners. Brush tops with egg yolk.
Bake 30-40 minutes or until lightly browned. Transfer to wire
racks to cool. Poppy
Seed & Honey Filling

1 cup poppy seeds

1/2 cup milk

1/4 cup honey
-
Zest from 1/2 lemon
-
1/8 cup granulated sugar

Pinch of salt

In a saucepan, combine poppy seeds, milk, honey,
lemon zest, sugar, and salt
over medium-low heat. Cook until mixture thickens,
stir constantly. Remove from heat and let
cool.
Add egg and beat well. If mixture is
too
thin, return to
heat
for a few minutes

3 parts dried apricot

Brandy or water
-
2
parts butter
Soak apricot in water or brandy for 30 minutes. Puree
apricots and butter together.
